- In a pot, fill in water to cover potatoes. Bring to a boil, then reduce heat and simmer until tender, taking around 10 to 12 minutes. Drain and allow to cool.
- Combine potato dressing with potatoes, celery, red peppers, tomatoes and eggs. Mix gently.
- Spoon potato salad into a bowl lined with salad leaves and sprinkle with spring onions.
