Potato and Egg Salad

  1. In a pot, fill in water to cover potatoes. Bring to a boil, then reduce heat and simmer until tender, taking around 10 to 12 minutes. Drain and allow to cool.
  2. Combine potato dressing with potatoes, celery, red peppers, tomatoes and eggs. Mix gently.
  3. Spoon potato salad into a bowl lined with salad leaves and sprinkle with spring onions.
